Collapse ▲Youth in Swain County had a rewarding and educational experience learning baking techniques and candy making skills through a bake off. The purpose of the Sweet Treat Bake-off was to encourage adults and youth to work together on a baking project. Baking was done by the youth with supervision, directions, suggestions, and help from an adult.
Categories included: cookies, breads/muffins/rolls, cakes, cupcakes, decorated items, healthy choices and candies. A special thank you to the judges for taking the time to judge all the delicious entries and electing the category winners.

If you have an interest in baking, the Swain County 4-H will be hosting ‘A Pound Of Love’ Bake-off for kids that will be taking place in February. This is a chance for youth in the community to enter their favorite pound cake recipes. All flavors are welcome!

Lilah’s Apple Cake with Orange Glaze
Ingredients
Cake
- 1/2 cup unsalted butter
- 3/4 cup of packed brown sugar
- 1/4 cup of white sugar
- 2 large eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup of non-dairy coconut yogurt
- 1/4 cup of orange juice
- 1 teaspoon vanilla extract
- 2 cups honey crisp apples peeled, cored, and finely chopped mixed with 2 tablespoons of orange juice with a 1/2 tsp of pumpkin pie spice, and 2 tablespoons of white sugar
Orange Glaze
- 3/4 cup of powdered sugar
- 4 tablespoons of orange juice
- 1/2 tsp of orange zest
- 1 tablespoon of butter
Instructions
- Preheat oven to 350°F and prepare nonstick mini loaf pans with Pam.
- Sift together flour, baking soda, pumpkin pie spice, and salt in a large bowl. Set aside.
- In a separate bowl, mix together the yogurt, orange juice, and vanilla. Set aside.
- Using your stand mixer, beat together butter and sugars until creamy. Add both eggs until well incorporated.
- Alternating, add flour mixture, and yogurt mixture until just combined.
- Hand mix in finely chopped and peeled apples.
- Pour batter into prepared mini loaf pans.
- In a small bowl, stir together butter, sugar, milk, and vanilla extract until smooth. Let stand for a minute or two to slightly thicken and drizzle generously over warm apple cake. Eat immediately.
